Seven days into January and my goal to incorporate more veggies into my diet is still going strong! One of my favorite methods for consuming these tasteless greens is to blend them up into an icy cold smoothie. With the help from vegetable’s trusty companion, fruit, this refreshingly light drink is anything but ordinary. The frozen wild blueberries play a crucial roll in masking the otherwise bland taste of the baby spinach. If it weren’t for the leaf’s conspicuous green color, you would be able to sneak handfuls of it in without anyone ever suspecting a thing.

I love to make this energizing snack mid-morning to hold me over until lunch. It is creamy and rich with flavor, yet sits light on the stomach and clocks in at only 200 calories. If you’re feeling adventurous, blend in one tablespoon of vanilla flavored protein powder to reap a more substantial meal.It feels silly to even post a recipe because there’s no correct way to make this drink. If you have a strong preference towards a particular produce, throw it into the mix. You’re almost always guaranteed to make a winner when blending these basic ingredients together. Instructions

  1. Dump ice into bottom of blender and layer milk, spinach, blueberries, and banana on top.
  2. Blend until well incorporated. Serve immediately.
