Memorial weekend always marks the countdown till summer for me, so today I’m celebrating with chunky pineapple salsa! This tangy appetizer is perfect poolside with margaritas or for serving at your next BBQ.

The highlight of this recipe is truly the presentation. By slicing a pineapple lengthwise and scooping out the core, you can repurpose the skeleton as a serving bowl for all your munching needs.

There are only a few key ingredients that go into this recipe, making it a cinch throw together for last minute hosting. I love how the fresh cilantro mingles with the sweet pineapple and citrusy lime juice.

If you’re feeling adventurous throw in a diced jalapeno (seeded) to kick things up a notch.

This sweet and tangy salsa is complements fish tacos, grilled chicken, or sprinkled on top of salads. It also does well on it’s own with some tortilla chips.
